Salmon Season

Here is a great Recipe for Salmon Burgers with a bit of a bite! I found it on the internet on Salmon Wasabi Burgers Serves: 4 Ingredients
  • 1 pound skinless salmon filet
  • 1 tablespoon fresh ginger, peeled and minced
  • ¼ cup fresh scallions, finely chopped
  • ¼ cup fresh cilantro, minced
  • 2 large eggs
  • 1 tablespoon freshly squeezed lime juice
  • ½ cup blanched almond flour (not almond meal)
  • 1 teaspoon sea salt
  • ¼ cup wasabi powder (or one tube of paste)
  • 1 tablespoon water
  • coconut oil for frying
  1. Rinse salmon, pat dry, and cut into ¼ inch cubes.
  2. In a large bowl, combine salmon, ginger, scallions, cilantro, eggs, lime juice, almond flour, and salt
  3. In a small bowl, combine wasabi powder and water to form a paste. The first time I made this I used 1/2 tube of paste and the flavour was very delicate. You could use the whole tube.
  4. Mix wasabi paste into salmon mixture
  5. Form batter into 2-inch patties with your hands
  6. Heat oil in a large skillet over medium high heat
  7. Sauté patties in batches until golden brown, 6 to 8 minutes per side
  8. Serve as a main with a salad or on a bun. I have had both.
