Delicious, Nutritious and Easy



I knew I was having Chicken for dinner, but what to do with it. First thing I did (in the morning) was cut 3 Chicken Breasts into large 'fingers', then went to the fridge and found some Chipotle chilies in sauce, I chopped one up and mixed it up with the chicken, a little salt, pepper and garlic powder, then threw it in the fridge til dinner time.   When I got home from work I poured a glass of wine and started on dinner.  First, put some coconut oil in a pan, when it is hot, add the chicken mixture, brown on both  sides then add a can of coconut milk and simmer.  Next up are the noodles. I had some rice noodles but not enough so added some Bean noodles and Sweet Potato noodles. Cook those up. I went to my garden and got some fresh herbs, chives, sage, marjoram, oregano and added to the cooked noodles.  Fill you plate with noodles add chicken and sauce.... Dinner is ready.  It is fast and very tasty. I am sure you all have made or created some great dinners. Send them to me and we can share with everyone on Foody Friday
